“Sasanoha Bakery” Natural Yeast and Organic Ingredients for Gently Filling, Flavorful Breads

Tucked in among the old homes of Nakazaki-cho, just east of Umeda in central Osaka, Sasanoha Bakery is a small-scale purveyor of all vegan breads. Each offers a substantial bite and gentle flavor to add healthy variety to your dining table.

Familiar Favorites Baked Vegan Style

The name Sasanoha means “bamboo leaf,” but it’s actually the result of a misunderstanding. Owner Mihoko Sasakura explains: “I chose it partly because ‘sasa’ is part of my surname. Bamboo led to panda, and well, pandas eat bamboo leaves, don’t they? What better image for a vegan bakery than a cute little leaf-eating panda? Except, it turns out pandas are classified as carnivores. Oops!”

Sasakura began baking her own bread around 20 years ago when her favorite bakery in the world closed down. Seeking to make something similar by preparing natural yeast at home. After around five years (and following the birth of her child). She got the idea of opening her own bakery.
Initially, Sasakura sold her breads at an acquaintance's café; the cafe was vegan so she began making her bread vegan, too. Her natural yeasts are a good fit with veganism, and she has maintained that approach ever since opening her own bakery 15 years ago.
Incidentally, while pandas are technically carnivores, they are vegans in effect, eating only bamboo and its leaves.
