Vegan Noodles Foster a Community
Mitsuka Bose is famous for its ramen in miso broth; the vegan tantanmen came about as an idea to use ramen as a vehicle for bringing the community closer together. When Mitsuka Bose moved a couple of years ago into new unusually spacious second-floor premises next to Hotarugaike Stn., a short train ride north of Osaka City, Saito came up with ideas to take advantage of that space and make Mitsuka Bose a place to gather.
“With a university close by, there are lots of students and people from overseas in this area,” says Saito. “It makes sense to have a place where vegans and non-vegans can enjoy a meal together.”
The shiitake and kelp-based broth includes saké lees from the Akishika brewery and miso from Toyono, and is enrichened with soy milk. It’s also fortified with an immaculate, locally produced pea-based meat substitute, and a nice dash of chopped lotus root for texture.
“The point of Mitsuka Bose is to foster the community,” enthuses Saito. Indeed, local eateries like these are beacons of such togetherness and equality.
